Chilli Paneer!!

Chilli Paneer!!




Ingredients.

1 n half slab of paneer 600 grms or 21 oz cut into 3/4 inch cubes.

1 cup cubes of red bell pepper.
1 cup cubes of yellow bell pepper.
1 cup cubes of green bell pepper
1 n half cup cubes of red onion.(i feel red onions are firmer n tastier)

1 tbs finely chopped ginger garlic.

2 green chilies chopped or cut into pieces.
3 tbs of corn starch.

1 tsp chilli flakes.
1/4 tsp crushed pepper.
2 tbs chili garlic sauce.

2 tbs tomato ketchup.

1/2 tsp dark soy sauce,

1/4 tsp vinegar.

Oil for frying.
Salt as per taste.

Procedure

Heat oil in a pot for frying.
Make a paste by adding water in corn starch.(not too thick and not too thin)
Add chilli flakes and pepper to the paste.

Dip the panner cubes in the paste and fry till slight golden.Keep it aside.DO NOT DISCARD THE PASTE

Then mix the sauces (chilli garlic,tomato ketchup,soy sauce,vinegar)in a bowl keep it aside.
Heat the wok.Add 3 tbs oil.
Add finely chopped ginger garlic.
Add cut green chillies.

Then add all the bell peppers and onion.

Sprinkle salt and cook it on high flame for about 3-4 mins(veggies should remain crunchy).
Make a well in the centre of veggies and add all the sauces.cook for half a minute.

Then add the remaining corn starch paste and cook for a minute.

Finally add the fried paneer toss it for about 2 mins. let it coat well with the sauces.

Serve Hot.

Oats Idlis!!


Oats Idlis

Ingredients

2 cups Oats(original) lightly roasted.
1 cup Sooji coarse .
1/2 cup veggies.(carrots grated,beans finely chopped,peas,corn)
Tadka-Urad dal,Chana dal,Olive oil.
1 cup yogurt.
1 Tbs Eno.

Procedure

Grind Oats and keep aside.
Put some oil in the pan.
Add Urad dal,Chana dal and brown a little.
Add the veggies cook for few mins.
Add sooji to the veggies roast lightly.
Remove from heat.
Add the powdered oats to the sooji mixture.
Add Yogurt  and some water to make idli batter consistency.
Ahen add eno and immediately put in moulds and steam for 12-14 minutes.


Ricotta Stuffed Shells!!







Ricotta Stuffed Shells...

Ingredients

Stuffed Shells-
15 oz of Ricotta.
1 cup Blanched Spinach.
1/2 cup grated Parmesan cheese.
1/2 cup Italian cheese blend.
16 pasta shells.(cooked a bit less than instructed on the box)
Salt and Pepper.
Sauce-

1 can Tomato Sauce.
2-3 Basil leaves torn.
2-3 Garlic chopped.
2 Tsp Italian seasoning.
Chilly flakes.
Salt and Pepper.

Procedure

Shells
Mix the Ricotta cheese + 1/4 cup Parmesan cheese + 1/4 cup Italian cheese blend.
Add salt and peppr as per taste.
Add chopped blanched Spinach.
Stuff the cooked shells with the cheese mixture.
Keep aside.




Sauce
Add some oil in the pan.
Add chopped Garlic till slightly brown.
Add the tomato sauce.
Add basil leaves.
Add the italian spice blend.
Add salt and pepper as per taste.
Add chilly Flakes as per requirements.
add some water and cook for few minutes.
Take a baking dish.
Put some sauce at the base.
Arrange the shells open side up.
Pour the remaining sauce on the shells.
Add the remaining Parmesan cheese and italian cheese blend over the shells.




Bake covered for 25 minutes till it starts to boil.
Then remove cover and bake till the cheese bubbles.

Batata Vada!!




Batata vada it is!!!!!!!!!

Ingredients

For vada.
3 cups Boiled mashed Potatoes.

2- 2 n half tbs Ginger garlic green chilli paste.
7-8 curry leaves.
1/2 tsp mustard.
Pinch of Asafoetida.
1/2 tsp Turmeric powder.



2-3 tbs oil.
Salt as per taste.
For vada Cover.
1 cup besan/chickpea flour.
1-2 tbs Rice flour.
1/2 tsp of red chilli powder.
1/2 tsp Turmeric.
Salt as per taste.
Oil for frying.

Procedure.

For cover
Mix Besan,Rice flour,salt.turmeric powder and chilli powder.



Add water till it forms a batter.(till it coats the spoon,not to thick not too thin)'




Keep it aside.
Add a pinch of baking soda.
Mix properly.
For Vada
Heat 2 tbs oil.
Add mustard and wait till it crackles.
Add asafoetida and turmeric powder.
Add Curry leaves.
Add ginger Garlic chilli paste.
Cook till it browns a little bit.



Add this mixture to the boiled mashed potatoes.



Add salt as per taste.
And mix it properly.
Make 13- 14 small balls or vada.



Heat oil in a pot for frying.
Dip these balls in the batter and fry in the oil till golden brown.

  

Instant Chutney.
In the same oil put a few tbs of batter(only batter) in the oil and fry till golden brown.



Gring in the mixer with garlic and chilli powder..


Chutney readyyyy!!!!!!

Kati Wrap / Veggie Frankie




Kati Wrap/Veggie Frankie.

Ingrediens


For kathi rolls.
2 big boiled potatoes mashed.
1/4 cup chopped Onion.
Green Chillies chopped.
1 tsp coriander cumin powder.
1/2 tsp chili powder.
1/2 tsp Amchur Powder.
Salt as per taste.
1/4 cup Bread crumbs.
2-3 tbs Corn starch.
Oil for frying.
In the wrap.
Tortillas.(I took 10 inch tortillas)
Mint chutney.
Chat masala.
2 tbs yogurt.
Chilli sauce.
Onions sliced lenthwise
Shredded cabbage.
1 cup Amul Cheese
Butter.

Procedure.

Kathi rolls.
Mix the potatoes+Onion+spices+green chilies+Bread crumbs and make cylindrical patties.


 



  











Dip these patties in the Corn Starch and shallow fry till crispy.

Mix the mint chutney +2 tbs yogurt+pinch of chat Masala.
Cut the tortilla (if 10 in)in half(2 semi circles)
Heat slightly on the pan.


Spread the chutney on the tortilla.


Place the kathi roll /cylindrical patty in the center.



Add cabbage and onions.

Add chilly sauce.

Some grated cheese.



Wrap it and grill on the pan with butter.


Serve hot.
