Pizza Cups!!






Pizza Cups..!!!

Ingredients

1 cup Chopped capsicum.
1 n 1/2 cups chopped onion.
1 Medium Tomato chopped.
1 cup cubed paneer
1 tbs Tomato Ketchup.
1 tsp Coriander Cumin Powder.
1/2  1 tsp Chilli Powder.
salt as per taste.
Pepperidge Farm cups.
Shredded MOzzarella Cheese.

Procedure

Filling
Add some Oil in the pan.
Add chopped Capsicum and Onion.
Saute for 3-4 minutes.
Add chopped Tomato.
Saute for 4-5 minutes.Add the spices and then add Paneer.
Add ketchup.
Salt as per taste.
Switch of after 1-2 minutes.



Cups.
Bake the cups as directed.
As instructed on the pastry box.about 400 F 12-15 mins.Till golden brown.



Let it cool for 5 minutes.
Add the filling in it.
Put some Mozzarella cheese.
Bake for 4-5 minutes or till cheese melts.
Serve hot.

Methi Malai Matar

Ingredients.

1 cup Peas Steamed.
3 cups chopped methi leaves.(Fenugreek leaves)/about 3/4 cup Kasoori Methi.
1 tbs Ginger Garlic Paste.
2 tbs cashews.
2 tsp poppy seeds.
1 tbs grated khoya.
1/4 cup Cream.
1/4 cup milk.
1/2 tsp Garam masala.
1 tbs Coriander Cumin powder.
Salt to taste.
3 chillies slit in half.
1 medium onion chopped.
1 tomato chopped.
salt sugar as per taste.

Procedure

Put some oil in a pan.
Add chopped Fenugreek/methi leaves.
Saute for a min.
Cover it and cook for 5-6 minutes stirring in between.
Keep it aside.
Mix the cashews and poppy seeds ,keep it soaked in the warm milk cream mixture.
Grind into a fine paste.
Add some oil in a pan.
Add  slit chillies,Onions Saute for a min,then add ginger garlic paste and saute till onions are translucent.
Add garam Malsala,Coriander cumin powder.
Saute till spices are cooked thoroughly
Add chopped tomato and cook for 4-5 minutes till oil starts leaving from sides.
Let the mixture cool down and make a fine paste.



Heat the pot ,add some oil ,add the grated khoya and saute till slightly brown.
Put the Onion Tomato Paste and keep stirring.
Add the fenugreek leaves/methi in it and mix.
Then add the steamed peas.
Add about a cup of water and bring it to a boil.
Then add the cashew cream paste while stirring continuously.
Add salt and sugar as per taste.
Serve hot with parathas.

Add mushroom instead of matar/peas or add paneer.....will taste equally awesome!!!

Ras Malai

Ingredients

5 cups milk -for Malai(rasgullas)
5 cups milk -Ras(sweet milk)
3 tbs vinegar.
14 oz can condensed milk.
dry nuts coarsely ground.
1/2 tsp Cardamom powder.
1 n 1/2 cups sugar.
6 cups water.
1 muslin cloth.

Procedure

Ras
In one heavy bottom pot add 5 cups milk and 1 can of condensed milk and turn on the heat with continuous stirring.(whole milk)
Boil the milk  for 7-10 minutes, add the ground nuts ,cardamom powder and switch off the gas.

I prefer Ras Malai a little less sweet,  if you like it sweeter add 2 tbs sugar to it.
let it cool down.
Malai
Add 5 cups of milk in in another pot and turn on the heat.(whole milk)
When the milk comes to a rolling boil add vinegar and switch of the gas.
Keep stirring till the milk curdles.
Sieve the curdled milk with the muslin cloth.
Squeeze gently.
Keep some weight on and let it stand for 15 mins.



Meanwhile mix the water and sugar and bring it to a rolling boil.


After 15 mins take out the cheena and rub it with your palm gently.(dont apply too much pressure)

    
keep kneading till it forms a smooth ball(no cracks).

Make all the balls and put them in the sugar syrup.(I prefer to keep the size small....)
Cook them uncovered for 5 minutes.
Then cover it and cook fro another 5 minutes.
You will see the gullas double in size.

   
Again cook it uncovered for 5 minutes switch off the burner.
let it sit uncovered till it cools down.
Now squeeze the sugar syrup out of the balls and add the balls to the milk(normal temperature).
Keep it in the fridge for atleast 6-8 hrs so that the balls soak up milk.
Serve cold.
