Rainbow Cake!!






Rainbow Cake

Ingredients

2 n 1/2 cup All Purpose Flour.
1 cup butter(Softened 2 sticks)



1/4 cup Canola oil.



2 n 1/4 cup sugar.



4 eggs.



Food Colours.(your Choice)
1 tbs Cocoa Powder.



1 cup whole milk.



1 tsp Vanilla Extract.
1/2 tsp Salt.
1tbs baking Powder.

Procedure

Preheat oven to 300 F.
Mix sugar ,Oil and Butter till light and fluffy.
Add eggs and mix till pale yellow.
Add all purpose flour,baking powder and salt.(don't overmix)
Then add milk and mix just till combined.
Add Vanilla extract.
Divide the Batter into 4 different parts.
Add different colours in each and in the fourth one add cocoa Powder.
Put the Dollops of coloures batter in random fashion.

Take a skewer and make light swirls in the batter creating a design.



Bake the cake for about and hour or till the toothpick comes out clean.

Sandwich Uttappam!!


  


Sandwich uttappam...

Ingredients

1 cup Dosa batter.
1/2 cup Chopped Capsicum.
1/2 cup soaked Moong.
Chilli Falkes.
Potato sabji.
Green chutney.


Procedure

Heat the pan.
Spray some oil.
Put a spoonfull of dosa batter .
Top it up with Chopped Capsicum.
On another uttappam sprinkle some soaked moong.




After about a minute flip it over.


Cook on other side.
Assembling.
Take the moong uttappam.
Spread some chutney on it.
Then add spoonfull of Potato sabji.
Spread it and cover with other Uttappam.
Serve hot.

Mini Strombolis!!






Mini strombolis...(grilled veggie)

Ingredients

1 cup small broccoli chunks.
1 cup Capsicum cut lengthwise.
3/4 cup corn Kernals.
1 cup Onion sliced lengthwise.
1 cup sliced Paneer strips.
1 tbs Cajun seasoning.
1 Cup Pizza sauce.
1 cup Mozzarella cheese.
Pizza dough Home made or store bought.
Salt as per taste.
Chilli Flakes if desired.

Procedure

Preheat the oven at 350 F.
Add the Cajun seasoning , salt chilli flakes  to the cut veggies.
Grill the veggies on the grilling pan with some olive oil.



Grill the paneer strips.



Roll the dough flat about 1/4 inch thickness.
Cut into long rectangular strips about 4 inch wide.


Spread some sauce on it.


Add grilled veggies and paneer.
Add lots of cheese.

  
Roll loosely and give some slits on the top.



Bake for 15 mins or till brown.
Serve hot.

Bread Pakoda Chaat!!




Bread Pakoda Chat!!!

Ingredients

8-9 slices white Bread.
Oil for frying.
Stuffing
2 cup Boiled potatoes.(mashed)
1/4 cup Corn kernals steamed for a minute.
1-1.5 tbs Ginger Garlic chilli Paste.
salt as per taste.



Coating
1 cup Beasan(gram flour).
1/4 tsp carrom seeds.
1/4 tsp Turmeric.
1/2 tsp chilli powder.
Salt as per taste.
1 tbs hot oil.



Chat
3/4 chopped Onion.
3/4 cup chopped Tomatoes.
Green Mint Chutney.
Tamarind Date chutney.
Fine sev about a cup.
Coriander for garnishing.

Procedure.

Mix the ingredients of the stuffing together and keep aside.
Mix all the coating ingredients and add some water to form batter(not too thick not too thin...should coat the spoon)Keep aside.
Take a slice of bread and cut in Half.
Spread the stuffing over it.
Dip it in the Beasan (gram flour)coating.
Deep fry or Shallow fry it till golden brown.

 
You can eat this with Chutney or sauce as it is.
For chat
Cut it in desired sized pieces.
Spread both the chutneys on it.
Put some onion and tomatoes.

  




Garnish with sev and chopped Coriander.
Serve immediately

Pizza Cups!!






Pizza Cups..!!!

Ingredients

1 cup Chopped capsicum.
1 n 1/2 cups chopped onion.
1 Medium Tomato chopped.
1 cup cubed paneer
1 tbs Tomato Ketchup.
1 tsp Coriander Cumin Powder.
1/2  1 tsp Chilli Powder.
salt as per taste.
Pepperidge Farm cups.
Shredded MOzzarella Cheese.

Procedure

Filling
Add some Oil in the pan.
Add chopped Capsicum and Onion.
Saute for 3-4 minutes.
Add chopped Tomato.
Saute for 4-5 minutes.Add the spices and then add Paneer.
Add ketchup.
Salt as per taste.
Switch of after 1-2 minutes.



Cups.
Bake the cups as directed.
As instructed on the pastry box.about 400 F 12-15 mins.Till golden brown.



Let it cool for 5 minutes.
Add the filling in it.
Put some Mozzarella cheese.
Bake for 4-5 minutes or till cheese melts.
Serve hot.

Methi Malai Matar

Ingredients.

1 cup Peas Steamed.
3 cups chopped methi leaves.(Fenugreek leaves)/about 3/4 cup Kasoori Methi.
1 tbs Ginger Garlic Paste.
2 tbs cashews.
2 tsp poppy seeds.
1 tbs grated khoya.
1/4 cup Cream.
1/4 cup milk.
1/2 tsp Garam masala.
1 tbs Coriander Cumin powder.
Salt to taste.
3 chillies slit in half.
1 medium onion chopped.
1 tomato chopped.
salt sugar as per taste.

Procedure

Put some oil in a pan.
Add chopped Fenugreek/methi leaves.
Saute for a min.
Cover it and cook for 5-6 minutes stirring in between.
Keep it aside.
Mix the cashews and poppy seeds ,keep it soaked in the warm milk cream mixture.
Grind into a fine paste.
Add some oil in a pan.
Add  slit chillies,Onions Saute for a min,then add ginger garlic paste and saute till onions are translucent.
Add garam Malsala,Coriander cumin powder.
Saute till spices are cooked thoroughly
Add chopped tomato and cook for 4-5 minutes till oil starts leaving from sides.
Let the mixture cool down and make a fine paste.



Heat the pot ,add some oil ,add the grated khoya and saute till slightly brown.
Put the Onion Tomato Paste and keep stirring.
Add the fenugreek leaves/methi in it and mix.
Then add the steamed peas.
Add about a cup of water and bring it to a boil.
Then add the cashew cream paste while stirring continuously.
Add salt and sugar as per taste.
Serve hot with parathas.

Add mushroom instead of matar/peas or add paneer.....will taste equally awesome!!!
