Veggie chili!!!

Ingredients

2 cups Mixed beans.(soaked overnight)



2 small Tomatoes.
1 Medium Red Onion finely chopped.
4-5 Basil Leaves torn.
3-4 Garlic Cloves chopped.
1 cup Celery diced
1 cup Carrot diced.
3 jalapeno Peppers chopped.
1 tsp Pepper powder.
Chilli Flakes optional.
Salt as per taste.
Olive oil.
1/2 tsp Cumin powder.
1 tsp Italian Seasoning(optional)

Procedure

Mix all the ingredients and water about 2 inches over the veggies  and slow cook on high for 4-5 hours.




OR
Mix all the ingredients in a thick bottom Pot or a stew pot add water about 2 inches above the mixture and cook till beans are tender.(add more water if water evaporates)

Stuffed Idli/Appe/Paddu

Ingredients

2-2 n 1/2 cups idli batter.(can use ready made)
4-5 Jalapeno peppers finely chopped.
1/4 cup Cheddar cheese.
1/4 cup golden corn kernels Steamed.
Salt Pepper as per taste.
Appe pan.

Procedure

Filling
Mix the Jalapeno , Cheddar cheese and corn.Season it with salt and pepper.
Heat the Appe pan.
Spray some oil on it.
Add about a tsp of batter in the pan.
Then add about a tsp of the filling.




Then cover it with Some more Batter.
Cover it and cook.

Guacamole Spread!!!!

Ingredients

2 Avocados peeled and diced.
1 Medium Red Onion finally Chopped.
2 Small Tomatoes diced.
1 tbs lemon juice.
Salt and Pepper as per taste.
Chilli Flakes as per taste.
1 tsp Coriander powder or chopped fresh coriander.
2 cloves of chopped Garlic.
Sliced Bruschetta Bread or Baguette Bread sliced.
Olive oil.

Procedure

Spray the Bread slices with Olive oil and toast till crispy.




Add some lemon juice to chopped Avocado immediately to avoid decolouring.
Mix the Avocado ,Onion ,Tomatoes ,Coriander ,chopped Garlic ,Salt and pepper also some olive oil and mix.
Add chilli Flakes if desired.
Spread the Guacamole on the toasted bread and enjoyy!!!

Dabeli

Ingredients

2 big Potatoes boiled and mashed.
1/2 cup Masala Peanuts.
1/4 cup +1/4 cup Tamarind Date chutney.
1/2 cup Chopped Red Onion.
1/2 cup Nylon Sev.
1 tbs Kacchi Dabeli Masala.
1 tsp chilli powder.
Salt as per taste.
3-4 Burger buns.
Butter to crisp the buns.

Procedure

Heat some oil in a pan.
Add 1/4 cup of Tamarind Date chutney.
Stir in chilli powder and Dabeli Masala.
Add 1/4 cup of water.
Bring it to a boil.
Add mashed Potatoes.
Keep stirring for 3-4 minutes.
Add 1/4 cup of Masala Peanuts.
Add salt as per taste.
Add some more water if the mixtures too dry.
Keep it aside.
Take the buns.
Apply some chutney on one side.
Spread some Potato Masala.
Add chopped Onion and Masala peanuts.
Cover it with other half.
Roast it on both the sides with some butter till it turns crispy.
Apply pudina chutney for a spicier twist!!













Egg Avocado Pitass!!

(Vegetarians Skip the egg)
A kick start for the big day ahead or just a quick recipe for a lazy weekend......packed with proteins ,fibres ,vitamin C E.....and last but not the least superr yummy

Ingredients

3 Hard boiled eggs chopped.
2 ripe Avocados chopped.
4 cups Lettuce chopped(you can keep it whole )
1 medium Onion  chopped.
1/4 heaped cup black beans.
Juice of 1 lemon.
2 tbs Mayonnaise.
1 tsp Dijon mustard .
Salt Pepper as per taste.
Dash of Tabasco sauce(optional).
5-6 pita breads.

Procedure

Mix the beans and chopped onion.Add some lemon juice and salt.Keep aside.




Then in other bowl mix the chopped Eggs,Chopped Avocados,Salt ,Pepper, Mayonnaise and Dijon Mustard.Mix properly.
Add some lemon juice and Tabasco sauce mix again.




Take the Pita half.
Add some egg avocado mixture.
Add chopped Lettuce and Onion and bean mixture.
Add some Tortilla chips for a crunch!!!!

Rice Rolls!!

What to do with the leftover ricee....?not to worry a yummy,crispy and healthy recipe comes for rescue ;)
This is my mommy's recipe,my all time favorite......also called mutkes...




Rice rolls....!!

Ingredients

1 n 1/2 cups Boiled rice(day old rice preferred)
1/2 cup Shredded Cabbage.
1/4 cup Jowar flour.
3 tbs Besan/gram flour.
1/2 tsp Chilli powder.
1/2 tsp Coriander Cumin powder.
Salt as per taste.
Some milk.
Coarse sooji/semolina.(about 3-4 tbs)

Procedure

Mix Cabbage,Rice ,jowar and gram flour and spices.









Knead like the dough.
Add more Besan/gram flour if too wet.
Then wet your hands and make small elongated rolls of the dough/mixture.




Steam the rolls for 10-12 mins.



Dip the steamed roll in the milk and then in sooji/semolina.
Shallow fry in some olive oil.



                                          Or if want to use less oil           
Cut the steamed rolls into bite size pieces and just toss in some oil till light brown.

Broccoli Crispers...!!

Ingredients

1/2 cup Chana Dal/Bengal Gram.
1/2 cup Masoor Dal/ lentil Dal.
1/2 cup Moong Dal/Green Gram Dal.
3-4 Green chillies.
1 inch Ginger.
1 cup finely chopped Broccoli.
Salt as per taste.
Pinch of Baking Soda.
Olive Oil to Bake OR Canola oil to deep fry.

Procedure

Soak all the three dals for about 4-5 hrs.
Grind the Soaked Dals Coarsely with Ginger and Green chillies.



Add chopped Broccoli and Salt and give it a nice mix.
Add Baking soda.
Baking method.
Preheat the oven to 375 F.
Spray the Mini cupcakes Pan with some olive oil.



Add about 1/2 tsp of the dal and Broccoli mixture and bake for about 18-20 minutes or till golden brown.



Deep Frying
Heat some canola oil in a pot.
Drop a spoonful of the mixture in the and if it sizzles that means oil is well heated.
Add few more spoonfuls of mixture and deep fry till crispy and golden brown.
Serve with mint Chutney and raw onion.
Tastes best when Served hot.
