Garlic Bread

Ingredients

Baguette about 8 inches long and sliced horizontally splitting it in half.
About 3-3.5 tbs Unsalted butter(softened)
6-8 Cloves of garlic.
1/2 tsp salt.
1/4 tsp crushed black pepper.
1/4 tsp Chilli flakes(optional).
1 tsp dry Italian seasoning(oregano,basil etc..)
1/4 tsp dried Parsley.
2 Tbs grated Parmesan cheese.
1/2 cup Mozzarella cheese.

Procedure

Dry Roast the Garlic cloves till they become slightly tender and finely chop them.
Mix the butter+Salt +Black Pepper+Chilli flakes+Italian Seasoning+dried Parsley+grated Parmesan cheese.
Add the chopped Garlic and mix.
Spread the butter mixture on the bread(inner softer side)
Toast the bread in the oven for about 5-6 mins at 400 F.
Take it out spread the Mozzarella cheese on the top and again put it in the oven till slightly brown n bubbly.
Serve hot.

Corn Spinach  Rice..

Ingredients

1 cup Basmati rice (UNCOOKED).
4-5 cups fresh Spinach leaves.(about 4 oz)
3/4 cup Corn Kernels.
3/4 cup grated Paneer.
3-4 Garlic cloves chopped.
2-3 green chillies split into half.
1 -1.5 Tsp Garam Masala.
1 Tsp Coriander Cumin Powder.
1 Tsp Cumin seeds.
Salt as per taste.

Procedure

Heat 2 Tbs olive oil in a pan.
Add some cumin seeds and let them sizzle.
Add chopped garlic and Green chillies.
Add Spinach and Corn kernels.
Add Garam Masala and Coriander Cumin powder.
Saute for 2 mins.
Then add the washed Rice and saute for another 2-3 mins.
Add water and Salt.
Cook covered.
Add grated Paneer 5 mins before switching off the gas so that the Paneer doesn't turn rubbery.

                                        Bean Salsa

Ingredients

1/2 can Black beans.
1/2 can Pinto beans.
1/2 cup Yellow peppers or Mango cut in small cubes.(if u like it sweet)
1/2 cup Green Pepper.
1/2 cup Corn or Baby corns or Sweet corns.
1 medium Tomatoes finely chopped.
1 small onion finely chopped.
Coriander chopped.
2 Garlic cloves finely chopped.
Lime juice 1 tbs.
Coriander Cumin powder 1 tsp.
Salt pepper as per taste.
Chilli flakes as per taste.

Procedure

Toss everything together....garnish with finely chopped coriander leaves.....





 Cabbage Alu Matar Paratha.

Ingredients

Dough

2 cups Wheat Flour.
2 tbs Olive oil.
1 tsp salt.

Stuffing

2 medium potato boiled and mashed.
1/2 cup peas steamed. ans slightly mashed.
3/4 cup cabbage grated.
Amchoor powder 1/2 tsp.
2 tsp Coriander Cumin powder.
Salt and chilli powder according to taste.
Few strings of fresh coriander chopped.

Procedure

Mix the flour salt and Olive oil knead into a dough.(not too soft).
Mix the boiled mashed potatoes, peas and the cabbage.
Add salt chilli powder Amchoor powder and Coriande cumin powder.
Then add chopped fresh coriander.
Take a medium ball of the dough.
Stuff it with the filling.
Roll into a Paratha.
Roast on both the sides with some olive oil.






Broccoli Onion Ricotta cheese paratha.

Ingredients

Dough

2 cups Wheat Flour.
1/2 tsp Salt.
Olive oil 2 Tbs.

Stuffing

1 n 1/2 cup finely chopped Broccoli.
1 cup finely chopped Onion.
3 Garlic Cloves chopped.
1 Tbs Kasoori Methi.
1 Tbs Coriander Cumin Powder.
Salt and pepper as per taste.
Chilli powder as per taste.
3 Tbs Ricotta Cheese.

Procedure

Mix the flour oil and salt and knead into a dough.(not too soft).
Heat some olive oil in the pan
Add the garlic.
Then add chopped onion and saute for 2-3 mins.
Then add the chopped Broccoli saute for a min.
Add spices. 
Cover the pan for 2 mins and then switch off the burner.
Mix the Ricotta cheese and the broccoli onion mixture.
Roll the chapati.
Spread the stuffing on half of the chapati and fold the other half over,seal the ends of semicircle.
Roast on both sides with oil ghee or butter.




Broccoli Sprouts(moong) Rice.

Ingredients

3/4 cups Chopped Broccoli.
3/4 cups Moong sprouts.
3 - 3.5 cups cooked rice(cook with some salt ,and olive oil).
4 cloves of Garlic chopped.
1 Tsp cumin.
1 Tbs Coriander Cumin powder.
1 Tsp Pepper Powder.
Salt and chilli powder as per taste.

Procedure

Heat some oil in the pan.
Add Cumin and let it sizzle.
Add chopped garlic and saute for half a min.
Add Moong sprouts, stir for few minutes.
Add chopped Broccoli.
Add all the spices.
Add salt ,cover and cook for 4-5 minutes till a bit tender.(add SOME water.. if required)
Add the cooked rice and mix properly.
cook uncovered foe 3-4 minutes.
Serve Hot.




Minestrone Soup

Ingredients

1/2 cup Celery diced
1/2 cup Onions
1/2 cup Carrots(optional)
2 Tomatoes diced(if u want the red color u can use canned... I prefer fresh)
1 cup Canned beans white n black.
1/2 cup small pasta shells.
2 cloves of Garlic chopped.
Olive oil.
1 Tsp dry Oregano.
1/2 Tsp fresh Rosemary chopped.
3-4 fresh Basil leaves.
Salt,Pepper and chilli  flakes as per taste.

Procedure

Steam the diced Celery ,Onions , Carrots, Tomatoes ,and beans till slightly tender.
Add some oil in a pot.
Then add the chopped Garlic.
Add the steamed veggies.
Then add oregano,basil,rosemary,salt ,pepper and chilli falkes.
Bring it to  rolling boil.
After about 5-7 minutes add the pasta shells and boil till tender.
Serve hot.
