Quinoa Salad.

Ingredients

2 cups Quinoa cooked.
1/2 cup Corn.
1/2 cup chopped onion.
1/2 cup diced Cucumber.
1/2 cup Tomatoes diced.(seeds removed)
1 can chickpea/Garbanzo beans. 
1/2 Lemon juice.
1 -1.5 Tsp Cajun Seasoning.(the twist)
Sat as per taste.
1/2 tsp cumin powder.
Chopped fresh coriander to garnish.
Note-you can add mozzarella cheese cubes if u like.


Procedure

Mix all the ingredients in a bowl.
Adjust for seasonings.
Best when served cold.(cling wrap it and chill it for an hour)







Mushroom Masala

Ingredients

1 cup Onion chopped.
1 cup Capsicum cubed/chopped.
2 cup sliced Mushrooms.
2-3 Garlic cloves.
1/2 tbs Coriander Cumin powder.
1/2 tbs Garam Masala.
1 tsp Chilli powder.
1 tsp cumin seeds.
Salt as per taste.



Procedure

Heat some oil in a pan.
Add cumin seeds and let them sizzle.
Add chopped Garlic and saute till slightly brown.
Add chopped Onion and saute till translucent.
Then chopped Capsicum and saute for 3-4 mins.
Add the spices and salt.
Cook the spices till raw flavor's gone.
Add Mushrooms.
Mushrooms start oozing water...cook till water is almost evaporated.(don't let it dry completely)
switch off the gas and serve with garma garam parathas :).


Bruschetta My Way!!

Ingredients

Baguette bread slices.
2 Tomatoes diced.
Fresh Coriander/Cilantro finely chopped.
2 Garlic cloves chopped.
1/4 cup Italian Cheese blend.
Olive oil to drizzle.
Basil pesto Sauce.(I used store bought)

Procedure

Preheat the oven at 400 F.
Arrange the Bread slices on the baking tray.
Drizzle with Olive oil.









Toast in oven for 4 mins or till just crispy.
Mix the diced Tomatoes +chopped Garlic +Chopped Cilantro+Italian Cheese blend.




Remove Bread form the oven ,spread the Pesto sauce on each of the bread slices.
Top it up with the diced Tomato mixture.
Sprinkle some salt .( black pepper optional)
And put it in oven again just for 1 MIN.(Just till the cheese melts a bit).
Serve immediately.
