Spicy Paneer Turnovers!!











Spicy Paneer turnovers...!!!!

Ingredients

1/2 cup Paneer chopped .
1/2 cup Onion chopped.
3/4 cup Capsicum.
1 tsp ginger garlic paste.



2-3 tbs of Pasta sauce(I used store bought)
1/2 tsp of Crushed Balck Pepper.
2 tsp Coriander Cumin Powder.
1 tsp Garam Malasa.


1/2 tsp chilli falkes(optional)
Cheese slices.(I got amul slices)
Salt as per taste.
Pie crust frozen.(store bought or homemade)
Pie Crust..
1 n 1/4 cup All purpose Flour.
1/4 tsp salt.
1/2 tsp sugar.
1/2 stick of butter (cold cut into cubes)
Ice cold water.
Mix everything in a food processor.Pulse.
Add water to make a medium dough.(not too soft not too hard)
Wrap it in plaastic wrap and refrigerate for atleat 3 hrs.
Or just freeze it till u need it.


     


Procedure.

Preheat oven to 350 F.
Heat oil in a pan.
Add chopped Onions ,Ginger garlic paste and saute for 1-2 mins till translucent.
Add chopped Capsicum.
Saute for a minute.
Add the spices.
Saute for 2-3 mins.
Add the pasta sauce.
Add salt and switch off the flame.



Unfold the Pie crust.
Cut into circlesaround 3 to 3.5 inch diameter.
 or Squares(3 inches)


Add the Stuffing.

 


Cut a cheese slice in 4 triangles and place one triangle on the stuffing.
    

Seal the ends.(with a fork)

   
Spray with oil or brush with egg whites.



Bake till Golden brown (10-12 mins)
Serve hottt......

Mint Chutney!!



Mint Coriander Chutney/multi purpose Chutney...!!!

Ingredients.

1 small bunch of Mint leaves(Pudina)
2 Bunches of Coriander.
5-6 Cloves of Garlic.
4-6 Green chillies.(according to how hot you want it)
2 tsp of coriander seeds.
1 tsp cumin.
1 tbs lemon juice.
salt as per taste.

Procedure

Dry roast coriander cumin seeds.
Add Mint, coriander leaves ,Roasted coriander seeds, cumin , cloves of Garlic and Green chillies to the grinder.
Make into a fine paste with very little water.
Add salt and lemon juice.
The chutney is ready.
You can freeze the chutney for about a month ,if you plan to do it just exclude lemon juice add it when you need it.
This chutney can be used in all types of chat or to have with sandwiches or patties tandoori almost everything.
You can add it to Biryani give a wonderful flavour :)
Add some yogurt to it , it can be added to the frankies!!!!

Schezwan Chicken!!



Schezwan Chicken...!!

Ingredients

2 tsp Crushed Pepper.
2 tsp ginger garlic paste.
Salt as per taste.
1 n half tbs dark soy sauce.
2 tbs Corn Starch.
3 chicken thighs(boneless) cut into big cubes.
1 cup capsicum thinly sliced.
1 cup Onion sliced onion.
Sauce
2 tbs schezwan sauce.
1-2 tsp chilly sauce.
1 tbs Tomato sauce(ketchup)
1 tbs dark soy Sauce.
Salt as per taste.



Ingredients.

Take the chicken pieces in a bowl.
Add Pepper ,salt,corn starch,Ginger garlic paste and soy sauce.



Coat the sauce properly.
Keep aside for 10 mins.
Add oil in a wok.
When Oil sizzles add the chicken.
Keep tossing till the chicken is cooked completely.
Remove the chicken in a dish.
In the same wok add some more oil.
Add Oil in the wok.
Add capsicum and Onions.



Keep tossing.
When the veggies are half cooked add all the sauces.
Salt and black pepper.
Then add the cooked chicken.



Stir for a min or two and serve immediately.









Tandoori Chicken /Paneer Tikka







Tandoori Chicken/Paneer Tikka...!!!

Ingredients

1/2 tsp Turmeric
2 tsp Coriander cumin powder
1/2 tsp Garam Masala.
2 tsp Tandoori Masala.
1 tsp Kashmiri chilly powder.(adjust as per taste)
1 tbs Lemon Squeezed.
1 tbs Besan /chick pea flour.(to coat)
1 tbs oil.
2 tsp Ginger Garlic paste.
2-3 tbs thick yogurt.(hung curd to eliminate liquid)
3 boneless chicken thighs.(cut in big chunks)/Paneer about 14 oz.
Salt as per taste.
Skewers.
Onion
Capsicum
Cherry tomatoes.

Procedure.

Preheat oven to 400 F.
Mix all the Ingredients.



For Paneer cut 1 inch pieces of Capsicum , Onion  marinate with Paneer and put it on Skewers.
Then Poke the skewer in this order Capsicum Onion Cherry tomato Paneer Onion Tomato and Capsicum again.
Add the chicken /Paneer pieces.




Marinate for at least 4-5 hrs .
Soak the wooden skewers in water for about 15-20 minutes before use.(prevents burning).
Cook in Oven for 20-25 minutes.
For Paneer 10-15 mins.
Serve with Coriander mint chutney.

Ingredients.

1/ 2 cup All purpose Flour.
1/2 cup Wheat Flour.
2 tsp kasuri Methi.(dried fenugreek)
1/2 tsp salt.
2 tbs oil.
Tandoori tikka Chicken.
Mint Coriander chutney.

4 Eggs.
Sliced Onion.
Lemon juice.
Salt as per taste.

Procedure.

Roti.
Mix the Wheat flour ,All purpose Flour,Kasuri methi ,Salt and 1 tbs of oil.









Form into a dough.(not too soft not too hard)



Keep covered for an hour.
Make 6-8 small balls.
Roll the dough(ball) into a 7 inch circle.
Roast till few brown spots appear.
Do the same with the rest.
keep aside.
