Cracker poppers ;)

Ingredients

Ritz or Monaco Crackers.
2 small Potatoes boiled and mashed.
2 tbs roasted red peppers.(If u don't enjoy its flavor just add red bell peppers)
2-3 tbs chopped green Bell Pepper.
1/4 cup Chopped Onion.
1/2 tsp black crushed Pepper.
Salt as per taste.
1/2 cup Mayonnaise.
Chilli flakes(optional)
Sunflower seeds to garnish and add a crunch.

Procedure

Mix the Onions,chopped green Peppers,Roasted bell pepper,salt,chilli flakes and crushed pepper.
Spread some Mayonnaise on the Cracker.
Put One tsp of the Potato mixture on it .
Sprinkle some Sunflower seeds .
Serve.

Mixed Veg Korma 

Ingredients

2 heaped cups Mixed veggies.(carrot,peas,corn,beans,cauliflower)
1/2 cup Capsicum sliced lengthwise.
2 Medium Tomatoes Blanched and pureed.
1 Medium Onion Boiled.
1/4 cup Cashews.
1 tsp Cumin seeds.
1 n 1/2 tsp Garam Masala.
1 n 1/2 tsp Coriander Cumin Powder.
2 tsp Chilli powder.
2 tsp Kasoori methi.(dried Fenugreek)
1/2 tsp sugar.
Olive oil .
1/4 th cup cream.(optional)

Procedure

Puree the Boiled Onion and Cashews in a blender keep aside.
Partially cook the mixed veggies(Except Capsicum)
Add some oil in the pan and slightly brown the partially steamed veggies on high heat and keep aside.(don't over cook)
In the same pan add cumin seed and let them sizzle.
Add the ginger Garlic paste and saute for a min.
Add the onion cashew paste and cook for 2 mins.
Add garam masala and coriander cumin powder.
Add chilli powder.
Cook the spices till raw flavors gone.(4-5 mins)
Add tomato puree and cook for another 3-4 minutes.
Add sliced capsicum and cook till just tender.(don't overcook)
Then add the mixed veggies.
Add 3/4 cup water.
Add Sugar,salt and Kasoori methi.
Cook for another 8-10 mins. on low heat.
Add cream.(optional)
Serve hot with plain Basmati Rice or Parathas.

Palak Paneer

Ingredients

2 n 1/2 cups Spinach puree.(Blanch Spinach in minimum amount of water and make puree)
1 cup Paneer cubes approximately.
1/2 cup chopped onion.
2 tsp Ginger Garlic paste.
2 tbs oil.
1 tsp Cumin seeds.
2-3 Bay leaves.
2-3 split green chillies.
1/2 tsp Garam Masala.
1 n 1/2 tsp Coriander Cumin powder.
Salt as per taste.

Procedure

Add 2 tbs oil in the pan.
Add cumin seeds and wait till they sizzle.
Add slit green Chillies.
Add bay leaves and ginger garlic paste.
Saute for a min.
Add chopped onion.
Saute for 2 more mins.
Add the spices.
Cook the onion and Masalas till raw flavors are gone.
Then add spinach puree and bring it to a boil.
Add 1/2 cup water.
Add Salt as per taste.
Cook for 5-7 mins.
Then add cubed Paneer and switch of the burner after 2 mins.(don't cook Too much it will make paneer rubbery)
Serve hot with Parathas.

Paneer Wheels!!

Ingredients

1 n 1/2 cup Paneer grated.
1/2 cup Capsicum finely chopped.
1/4 cup shredded Mozzarella Cheese.
1/2 tsp Amchoor powder.
1/2 tsp Chilli Flakes.
1/2 tsp crushed black Pepper.
1 tsp Coriander Cumin Powder.
Salt as per taste.
2 puff pastry sheets(I used Pepperidge Farm)

Procedure

Mix the Paneer and Capsicum.
Add shredded mozzarella.
Then add spices and salt , mix properly.
Thaw the Puff Pastry sheets.
Roll a bit to level.



Spread the Filling leaving 1/2 inch border on 3 sides and about 1 inch on the fourth.








Start rolling from the 1/2 inch side towards 1 inch side and seal with water.





Cut Wheels about 3/4th inch wide.





Place cut side down and Bake as per instructions or till they turn golden brown.

                              Samosa and Potli Samosa...

Ingredients

Covering
1 cup Wheat flour.
1 cup All purpose flour.
1 tsp salt.
2 tbs olive oil.
1 tsp Carom seeds.
Filling
2 n 1/2 cups Boiled Potatoes coarsely chopped don't mash completely(cut and make small cubes ,this adds to the texture)
1/2 heaped cup Peas boiled till tender.
1 n 1/2 tsp chilli flakes.
Salt as per taste.
1/2 tsp whole black peppers.
1/2 tsp coriander seeds.
1/2 tsp fennel seeds.
1/2 tsp cumin seeds.
1/2 tsp amchoor powder.
1 tsp Coriander Cumin powder.
Oil for frying.

Procedure

Dough
Mix the wheat flour and all purpose flour.Add salt and carom seeds.
Heat the oil till fuming hot and add to the flour mix.
Knead the dough using water.(Not too soft)
keep the dough covered with wet cloth for at least an hour.
Stuffing
Mix the potato and peas smash a bit with potato smasher.(don't overdo it)
Add all the spices and mix.
Taste for salt.
Then take a lime size ball of the dough.
Roll it into a 5 inch circle.





Cut it in center to form two semi circles.




Take one semi circle join two edges to make a cone.
Fill in about a tbs of filling and seal the ends.

















Keep it covered in a wet cloth.
Do the same with the rest.
heat the oil in pot on low medium flame.
Keep splashing the oil on the samosas.
And fry the samosas till golden brown ,base side down.

For potli
Take a ball half the size .
Roll it into a circle.
Gather its end and seal to form a Potli.


   

Fry Base down first.
keep pouring oil ver it with the spoon.

Bread rolls.

This is my Moms recipe, and one of my favorite ones too. She use to make it with different stuffing.The best part is that you can make it ahead of time for parties and get-togethers.Hope you like it.

Ingredients

  • 3 Medium sized Potatoes boiled and peedled.
  • 1/2 cup corn and Peas .(Coarsely ground)
  • 1/4 cup chopped Onion.
  • 1 tbs Ginger Garlic Chilli paste.
  • Coriander fresh ..chopped.
  • Salt as per taste.
  • 6-8 white Bread slices.
  • Cup of water.

Procedure
  • Mash the Potatoes.
  • Add the Corn and Peas mixture.
  • Add chopped Onion.
  • Add the ginger garlic chillli paste salt and Coriander.
  • Mix everything and that is our stuffing.
  • Cut the edges of the bread.
  • Quickly dip it in cold water.(DON'T SOAK TOO MUCH)
  • Remove excess water and put a small ball of stuffing in the center.
  • Wrap the Bread around it and gently press it to seal.
  • From elongated Bread rolls.


  • Repeat this for all the slices.
  • Cool them in the fridge for at least an hour before frying.(when cold rolls absorb less oil)



  • Fry them till golden brown.
  • Serve immediately with sauce or chutney of your choice.

Dal Makhni.

Ingredients


  • 1 cup Whole Urad Dal.
  • 1/4 cup Rajma.
  • 1 Dry Red Chilli.
  • 2 Tomatoes.
  • 1 tbs Ginger Garlic paste.
  • 1 tbs Butter.
  • 2-3 tbs sour Cream.
  • 4-5 Cloves.
  • 2 Bay leaves.
  • 1 small stick cinnamon.
  • 5-6 whole Black Pepper.
  • 1 tsp Cumin seeds.
  • 1 tbs Garam Masala.
  • 1/2 tbs chilli powder.
  • 1/2 tbs Kasoori Methi.
  • Salt.

Procedure

  • Soak The whole Urad Dal+Rajma+dry Red chilli overnight.
  • Then Pressure cook the soaked dal and rajma.(slightly overcook it,about 5 whistles).
  • Blanch the Tomatoes and puree them.
  • Put some oil in a pan.
  • Add the Butter.
  • Add the Cumin seeds and the Cloves , Bay leaves and Whole Black Pepper.
  • Add the Ginger Garlic Paste and saute till slightly browned.
  • Add the Tomato Puree.
  • Cook for 2-3 min.
  • Add the Garam Masala+Chilli powder and let it cook for 2-3 mins.
  • Add the cooked  Dal and rajma.
  • Add Kasoori Methi.
  • Add salt as per taste.
  • Cook on low flame for 5-8 mins.
  • At last add the sour cream and switch off the burner after a minute.
  • Serve with Parathas or Steaming rice.
