Pav Bhaji (INSTANT POT)


Pav bhaji !!!(Instant pot Version)

Ingredients

1 big green Pepper(capsicum)finely chopped.
1 big Onion or 2 small onions finely chopped.
4 tbs butter.
3 tbs oil.
1/2 Cabbage chopped.( about 3 cups packed n chopped)
1/2 Cauliflower chopped.(about 3 cups chopped and packed)
2 medium potatoes diced,
1/2 cup Green Peas.
2 tbs Ginger Garlic Paste.
2 tbs Pav Bhaji Masala.
1.5 tbs red chilli powder.(increase or decrease according to your preferences)
Lemon and chopped Onion for garnishing.
I USED MY FOOD PROCESSOR TO CHOP EVERYTHING IN THE FOLLOWING ORDER
Ginger Garlic.keep aside.
Onions and Green peppers.keep aside.
Cabbage and Cauliflower.keep aside.
Finally 2 tomatoes.
ALL UNDER 15 MINS.

Procedure

Switch on the Instant Pot on saute mode high for default 30 mins.
When the indicator shows hot add in Oil and 2 tbs butter.
Add in the ginger garlic paste.
Saute for a min and then add in the chopped Onions and green bell peppers.Saute for 2 mins.
Add in Pav bhaji Masala and Red chilli powder.
Saute till it leaves oil from sides.

Add Chopped tomatoes.Saute for 2-3 mins.
Then add in Cabbage ,Cauliflower and diced potatoes.
Add in Peas.

Add 1.5 cups of water.
Salt as per taste .
Close the lid .Turn the knob to sealing.Pressure cook 15 mins on high.

10 mins NPR.
Open the lid.Blend the cooked veggies COARSELY with a hand blender.

Add the remaining 2 tbs butter.cook for 4-5 mins on medium Saute mode .
Serve Hot with pav(bread dinner rolls)
This recipe tastes better if spicy...but feel free to decrease the measurements for  Masala n chilli powder .

Dahi Vada


Dahi Vada!!

Ingredients

1 cup Urad dal (split black gram)
1/4 cup moong dal split green gram.
3 green clillies.
1 tbs or 3/4 in ginger.
2 cups yogurt.
Chilli powder
Tamarind date Chutney.
Oil for frying.
Coriander 1/2 cup.
Procedure
Wash and Soak the Urad dal and moong dal overnight.
Grind the soaked dals(both)with ginger and green chillies.



Add salt as taste in the batter.
Now the MOST IMPORTANT STEP,whisk the dal batter to fluff it up.(whisking in the stand mixer is the best choice).
Fluffing up the batter helps make the vada lighter and spongy.
Heat the oil on low medium heat.(flame has to be low it helps vadas to cook through)
Drop a small drop of batter if it floats in the oil it means oil is adequately heated.
Then start dropping spoon fulls of batter in the oil.
Fry till slightly golden brown.
Pat the Vadas on the paper towels.Then drop them in lukewarm water.Keep them in water for about 2 mins then squeeze excess water keep aside.
Fry all the Vadas and keep aside.
Spread little Tamarind date chutney on all the vadas . 

Take the yogurt Add in about 3 cups of water.(not to thick or else vadas won't absorb the yogurt flavors)
Add 4 tbs of sugar and salt as per taste.
Pour the yogurt/buttermilk on the vadas and let them sit for about an hour before you serve.
This will let the yogurt flavors get absorbed.

Pav Bhaji!!

Pav bhaji!!






Ingredients

1 medium sized Cauliflower,washed and florets separated.
3 medium sized tomatoes.
2 cups chopped green peppers/capsicum.(1 big and 1 smal approx.)
2 cups chopped Onions.(2 medium sized red Onions)
2 medium sized Potatoes peeled and chopped into chunks.
about 1.5 cups peas.



3 tbs Ginger Garlic paste.
4-5 Tbs butter.
2 tbs Chilli Powder or as per your taste.
2 tbs Pav Bhaji masala .(add 1 tsp more if u like it spicy)
Salt as per taste.
Oil.
Red Food Color OPTIONAL.

Procedure

Mix the potatoes and Cauliflower in the pressure cooker and cook 3 whistles or cook it till it softens and then mash it with the masher.Keep aside.
Then blanch the tomatoes peel them and puree them.



Heat oil in a pan.
Add 3-4 tbs butter.
Add ginger garlic paste.Cook for a min.
Add onions and little salt.Saute till translucent.
Then add chilli powder and pav bhaji masala.



Cook till oil separates.
Then add Tomato puree.Add remaining salt.
Cook till oil floats on the top.
Then add green Bell peppers /capsicum.(I add it later because I don't want to overcook it.)
Cook for 4-5 mins.
Add in the the mashed cauliflower and potato mixture.
then add the peas.
Slow cook on low flame for 25 mins or till the raw taste is gone.ADD RED FOOD COLOR (OPTIONAL)
Keep stirring in between.


Garnish it with Coriander .Serve hot with Pav.

Paneer Tikka Wrap!!


Paneer Tikka Wrap ...!!

Ingredients

For Paneer Stuffing.
2 heaped cups of Cubed Paneer .(medium sized).
3 tbs thick yogurt.
1 tbs Tandoori masala.
1/2 tsp Garam Masala.
1/2 to 1 tsp chilli powder.
1/2 tsp corinnder cumin powder.
1/2 tbs Gram flour(Besan).
1/2 tbs oil.
Salt as per Taste.(little on higher side as its a stuffing).
1 tsp ginger garlic paste.
1/2 small red bell Pepper.
1 small Green Bell Pepper.
1 Medium Onion.

2 Green chillies chopped.
For the Wrap Roti.
1/4 cup Wheat flour.
3/4 cup all purpose flour.
2-3 tbs oil.
Salt to taste.
For the additional topping.
1 small onion thinly sliced.
1 lime.
Pinch of chat masala.
Green chilli sauce.
Tomato ketchup.
chopped green chillies if you like it hot.

Procedure.

For Paneer marination
Mix all the spices in a bowl.
Add yogurt form a paste.


Add ginger garlic paste ,Oil and gram flour.
Add Paneer cubes.
Coat the Paneer cubes with the marinade.

Keep aside for atleast 1/2 n hr.
Roti or Wrap
Mix the  wheat flour and all purpose flour.Add oil.Knead into a dough.Not too soft not to hard.Keep aside for 1/2 an hour.

For stuffing
Thinly slice the green and red peppers and onion.
Add some oil in a wok.
Add the sliced onions fry till just translucent.
Add the marinated paneer cook for 3 mins on medium high flame.
Add the sliced peppers.
Cook till it starts leaving oil.Keep aside.

Then for additional stuffing thinly slice oinions add lime juice and chat masala and chopped green chillies.Keep aside till assembly.
Now take kneaded dough.Make lime size balls.Take one and keep rest covered.
Roll the ball into an 8 inch round.Then roast on a preheated pan on medium high.Drizzle some oil.Flip the roti when bubbles start appearing.Repeat this twice till the roti has light brown spots and fully cooked.

Assembly
Place the Roti on the surface.Put two big spoonfull of the stuffing on right of roti leaving about 2 inches gap.Put some sliced onion and chat masala mixture on it.Then drizzle some green chilli sauce and ketchup according to your taste preference.
Start rolling the roti into a wrap.

yummmmm.......serve immediately or take it to a pot luck and warm it up just before serving.

Batata Vada!!




Batata vada it is!!!!!!!!!

Ingredients

For vada.
3 cups Boiled mashed Potatoes.

2- 2 n half tbs Ginger garlic green chilli paste.
7-8 curry leaves.
1/2 tsp mustard.
Pinch of Asafoetida.
1/2 tsp Turmeric powder.



2-3 tbs oil.
Salt as per taste.
For vada Cover.
1 cup besan/chickpea flour.
1-2 tbs Rice flour.
1/2 tsp of red chilli powder.
1/2 tsp Turmeric.
Salt as per taste.
Oil for frying.

Procedure.

For cover
Mix Besan,Rice flour,salt.turmeric powder and chilli powder.



Add water till it forms a batter.(till it coats the spoon,not to thick not too thin)'




Keep it aside.
Add a pinch of baking soda.
Mix properly.
For Vada
Heat 2 tbs oil.
Add mustard and wait till it crackles.
Add asafoetida and turmeric powder.
Add Curry leaves.
Add ginger Garlic chilli paste.
Cook till it browns a little bit.



Add this mixture to the boiled mashed potatoes.



Add salt as per taste.
And mix it properly.
Make 13- 14 small balls or vada.



Heat oil in a pot for frying.
Dip these balls in the batter and fry in the oil till golden brown.

  

Instant Chutney.
In the same oil put a few tbs of batter(only batter) in the oil and fry till golden brown.



Gring in the mixer with garlic and chilli powder..


Chutney readyyyy!!!!!!

Kati Wrap / Veggie Frankie




Kati Wrap/Veggie Frankie.

Ingrediens


For kathi rolls.
2 big boiled potatoes mashed.
1/4 cup chopped Onion.
Green Chillies chopped.
1 tsp coriander cumin powder.
1/2 tsp chili powder.
1/2 tsp Amchur Powder.
Salt as per taste.
1/4 cup Bread crumbs.
2-3 tbs Corn starch.
Oil for frying.
In the wrap.
Tortillas.(I took 10 inch tortillas)
Mint chutney.
Chat masala.
2 tbs yogurt.
Chilli sauce.
Onions sliced lenthwise
Shredded cabbage.
1 cup Amul Cheese
Butter.

Procedure.

Kathi rolls.
Mix the potatoes+Onion+spices+green chilies+Bread crumbs and make cylindrical patties.


 



  











Dip these patties in the Corn Starch and shallow fry till crispy.

Mix the mint chutney +2 tbs yogurt+pinch of chat Masala.
Cut the tortilla (if 10 in)in half(2 semi circles)
Heat slightly on the pan.


Spread the chutney on the tortilla.


Place the kathi roll /cylindrical patty in the center.



Add cabbage and onions.

Add chilly sauce.

Some grated cheese.



Wrap it and grill on the pan with butter.


Serve hot.
